1. Since when does the bakery Göing exist and what characterizes the bakery?

The bakery Göing was founded in 1920, over 100 years ago. We are a modern family business from Hanover with 30 stores and are always looking for new ideas and concepts. For example, we opened the first vegan bakery store in Hanover. Sustainability plays a very important role for us.

2 What were the original challenges in the company?

The daily order management in the stores was always a major challenge for us. Due to staff turnover and sickness-related absences, there were always fluctuations in the order quantities and the goods were often sold out too early. Every employee had their own "feeling" concerning the order quantities, which is why we often had to take a final look on them before ordering. This necessity of controlling the orders took a lot of time. In addition, we operate different types of stores, such as supply and catering outlets with their own product ranges and customer requirements. 

3. What were your objectives when you approached foodforecast?

We compared software solutions from several providers with the aim of getting to grips with the challenges mentioned above. After the initial discussions with foodforecast, we were immediately convinced. We sensed that you know exactly what you are doing, and today we can say: it was worth it! 

4. What has changed in the company since the introduction of foodforecast? 

Since the introduction of foodforecast, our orders have become more precise. With the use of AI, we can take much more data and factors into account than was previously the case and always receive accurate sales forecasts. As a result, we have better product availability and have been able to increase our sales by 5%. At the same time, we reduce our food waste by around 30%. Working with foodforecast is great and it's nice to see that we can rely on the AI. We now have more time for other tasks and are even adapting our operating processes to the AI software. 

5. What is for you the main added value of the software? 

We are fascinated by the AI and how quickly everything worked. The automation of the ordering process is a real workload relief for all levels and we save valuable working time. The collaboration with the foodforecast team works really well and there is always someone available. We also appreciated the four-week test phase at the beginning, which enabled us to see the results of the AI directly in our stores. This made it easier for us to assess whether the software was working or not.

6. Would you recommend foodforecast to other customers and if so, why? 

Yes, I would definitely recommend foodforecast because the results speak for themselves. Since using the solution, we have less food waste, significantly better availability of goods and have been able to increase our turnover by 5%. By automating the processes, we also save time and are more efficient. The flexibility of foodforecast is also great, because we can enter e.g. outlier days and our own order units in the system. You can tell that the software was developed specifically for bakeries.

7. Has the bakery Göing become more sustainable thanks to foodforecast? 

The bakery Göing has always been very sustainable, because we donate surplus baked goods, for example, so that hardly anything is thrown away. Thanks to foodforecast, however, we have become even more sustainable, as we have been able to reduce food waste by an average of 30%. In particular, this saves us valuable raw materials and resources that are needed for the production of baked goods. By baking according to demand, we have also become more sustainable and efficient in our work processes. 

8. How did your KPIs improve? 

Compared to the previous year, our food waste decreased by 30% and we have greater availability of our top-selling A-items. As a result, we are achieving higher sales, which immediately increased by 5% in the first month after implementing the AI. At the same time, B and C articles have been reduced so that there are no longer too many of them.

9. What is the feedback of your employees on the introduction of the software? 

Initially, our staff were a little apprehensive about using artificial intelligence. In the meantime, however, everyone is convinced and is behind the AI, as the employees also see the added value that the solution brings. They are particularly pleased about the time they have saved.
